Add light soy sauce, concentrated soy sauce, vinegar, cooking oil, sugar, starch, half a bowl of water and mix well.
Put a sufficient amount of cooking oil in the pot, add eggplant, fry for 2 minutes, wait until the edges of the eggplant pieces are slightly golden, then take them out.

– 800 gr of pork belly
– 2 branches of lemongrass – 2 branches of scallions – 3 horned chili peppers – 1 hot chili pepper – 4 cloves of garlic – 1 purple onion – 1 piece of ginger – 1 teaspoon of pepper
– Spices: 100 ml fish sauce – 100 gr sugar
– Bacon is only washed, cut into bite-sized pieces, then briefly blanched in boiling water, then poured into a basket
– Lemongrass, onion, garlic, chili, ginger and minced shallot.
Marinate the meat with some fish sauce and pepper. Before frying, add 1 tablespoon of flour or corn starch and mix well.
– Put the pan on the stove, add 3 tablespoons of oil, when the oil is a bit hot, add the meat and stir-fry, pay attention that when the meat is brown, take it out on a plate.
